La Salamandra is a small dairy farm outside Buenos Aires
that since 1991 has
engaged in the production of high quality dairy products.
What is Dulce de Leche?
Dulce de Leche (pronounced dulza day lechay) is a
source of pleasure, that is to be savoured slowly. It has all the
strength and sweetness of the Argentine pampas.
Why our "Dulce de Leche" La Salamandra?
Our "Dulce de Leche" is made of the top
quality raw materials, where the principal ingredient is the milk
itself. After milking our cows, our daily milk production is used
immediately for the production of Dulce de Leche without passing
through tanks, trucks or storage areas where it could spoil.
Dulce de Leche is made by blending together hot milk, sugar, vanilla
and sodium bicarbonate. It is an ideal source of nourishment for kids
and teenagers because it provides energy.
How to enjoy or Dulce de Leche
Dulce de Leche is very practical, full of nourishment
and can be eaten alone or spread on bread with butter (like peanut
butter or hazelnut cream).
In July 2000, our Dulce De Leche La Salamandra got the
first award at the Fancy Food Show of New York, in the category of
outstanding Jam, Preserve, Spreads or Sweet Topping.

Background Information:
When H.R.H. The Prince of Wales created Duchy Originals in 1990 it was because of his
belief in the clear advantages of organic farming: the production of natural and healthy
foods, and the sound husbandry which helps to regenerate and protect the countryside and
wildlife. These Duchy Originals biscuits are the result of such endeavors.

Tradition and wisdom since the XVI Century
The cultivation of the red pepper for Pimenton was introduced in "La Vera"
region (Spain) in the XVI Century by the monks "Jeronimos" of Yuste Monastery.
La Vera Pimenton is a product with an exceptional gastronomic
property and the uniqueness of its kind due to its special elaboration process.
To a large extent, the secret
of its singular quality lurks in its laborious and delicate process of drying.
A hearth of wood from holm oak provides the heat needed for the fruits to become
rightly dehydrated.
It is a slow process which, over ten or fifteen days, expert hands turn the
peppers (like "riddling" Champagne) until the right degree of drying is
achieved. This traditional system of drying gives the paprika its three
fundamental characteristics that make it exceptional. This resulted in its
being officially designated by Denomination of Origin.
