PIMENTON de la VERA
Introducing smoked paprika – Pimenton de la
Vera – from Barcelona’s Safinter, s.a., famous for their
exceptional quality La Mancha Saffron. This spice is a
craft product, handmade from the uniquely dried La Vera
peppers grown only in the microclimate of Spain’s western
Extramadura region.
Dried over an oak hearth for weeks, these
peppers are literally turned over by experienced hands (like
riddling Champagne bottles) until the ideal degree of
dryness has been achieved. This produces three unmatched
characteristics – aroma, flavor and stability of color.
Safinter Pimenton de la Vera is packaged in handsome tins of
70 grams with numbered labels guaranteeing it Denomination
of Origin.
We love the smoky flavor of all three types –
hot, sweet and bittersweet – in egg dishes, stews, game,
fish, shellfish, soups, rice, steamed vegetables and
cream-based sauces. It’s the spice called for in many
contemporary recipes, not least because of today’s
popularity of Spanish cuisine and all things Latin!

Since
the mid 14th century, the area around Dijon,
France has been identified with the world’s finest mustard.
The firm of Edmond Fallot (fowl-low), in nearby Beaune, the
renown center of Burgundy wine production, was founded in
1840 and continues to make the best of strong Dijon
mustard. This venerable producer follows the old fashioned
recipe and methods made law in Dijon in 1634. The firm is
family owned and operated with all production supervised by
the great-grandson of Edmond Fallot. This is not Dijon
style mustard like so many imitations are – this is the
real thing!
Fallot mustards are classics offering the
complexity, flavor and ardent taste available only when the
best seeds are ground with artistic precision and white wine
blended with the ultimate unfermented grape juices. In
Fallot mustards we have the perfect combination of
traditional expertise, intimate knowledge of Burgundy wine

Roberto Stucchi, applying his winemaking skills, has
created CAMPO CORTO from Coltibuono’s orchards where the
frantoio variety is at its most pungent and long-lived.
This is oil with enough Tuscan backbone to be the perfect
complement to really hearty food – roasts, game, proscuitto,
mushrooms, exotic vegetables and the most flavorful bread.
Different from comparatively mild Albereto but unfiltered
and organic too, CAMPO CORTO is beautifully boxed.

Colonna
The
Colonna estate is in the Molise region on Italy’s Adriatic
coast and is distinguished not only for its extra virgin
olive oil, but is highly regarded as the producer of extra
virgin olive oil directly pressed with organic lemons,
oranges and tangerines. Principessa Marina Colonna,
daughter of Prince Francesco Colonna, personally operates
the family’s extensive farm holdings.
Manually harvested when slightly underipe, Colonna olives
are processed and milled on the same day at the estate. The
oils are bottled in dark glass, unfiltered, labeled and
sealed by hand in square bottles and decanters unique to
Colonna. Seals and labels feature the family’s red coat of
arms – one of the most widely recognized icons of medieval
Rome.

aromas and lightness compared to robust Tuscan varieties.

Colonna Citrus/Olive Oils
Produced simply and naturally, these are some of the most
extraordinary tastes one can derive from olive oil.
Organically-grown Sicilian fruits bursting with flavor are
cut into pieces, thrown into the mill and pressed together
with olives. Juice of the fruit is drawn off along with
water from the olives, leaving the intense zest of the
fruit’s skin to combine with the flesh of the olives.

Bottura commissioned one of Italy’s best Tuscan producers to
create the oil he uses for all purposes at his restaurant in
Modena. Produced from Mariaolo and Leccino olives only, its
taste is harmonious, less forward and more versatile than
most Tuscan oils and perfect for salads, vegetables and
fish.

RAVIDA SICILIAN EXTRA VIRGIN OLIVE

Experts have described Ravida’s olive oil as tasting of
freshly mown meadow hay – herbal and intensely grassy. The
Olive Oil Companion says Ravida’s aftertaste is so
smooth and reminds one of sweet/sour sorrel leaves.
Regardless of the source, this is a singular taste, unique
even to Sicilian oils. Ravida blends three local olive
varieties picked from their 300 year-old trees –
Nocellara, a slightly fruity eating olive, Carasuola,
tasty and full-bodied and light green Brancolilla
for distinctive color and fragrance. Additionally,
unfiltered Ravida’s acidity level is an astonishing .010 –
one-tenth of 1%. The Ravida family, Sicilian since the
1300’s, uses their oil for everything from cooking meat and
fish, seasoning vegetables, salads, risotto and
pasta.

De MEDICI GASTRONOMIA TRUFFLE OIL
- This
truffle oil is made from the same genuine Ligurian
extra virgin olive oil as above. Highest quality truffle
oil is best achieved by balancing the truffle infusion with
this less assertive, more delicate EVOO. Most truffle oils
are made with cheap pure oil, particularly Umbrian,
resulting in a heavy truffle aroma but low quality oil
overall. The white truffles used in infusing this oil are
unearthed only near the oldest oak trees. The most aromatic
of these are steeped in the oil for 24 days. A small
quantity of natural truffle essence may then be added to
perfect balance. The result: pungent, woodsy perfume of
truffles with the best underlying EVOO. Add its earthy
flavor to pasta, risotto, sauces, mushrooms, cheese dishes,
omelets and scrambled eggs.

L'Estornell EVOO (named after the olive-loving bird depicted
on the label) is the result of pressing Arbequina olives
(80% - 90%) with two other northern Spain varieties, Farga
Aragon and Manzanilla, both of which impart a peppery
quality and a spicy aftertaste to the final blend. Bottled
with a soft pink label, this oil is especially versatile and
long-lived and thus popular in its five liter size, a value
in genuine EVOO for foodservice.

Lerida
Extra Virgin Olive Oil
The
first super-premium Spanish EVOO to be marketed in the US.
Introduced to the specialty food trade in the 80's, it
quickly gained a reputation for world-class quality among
chefs and food critics. It is produced from under-ripe
Arbequinas early harvested in the first weeks of November.
This produces a green-gold, fruity oil with a more ardent
taste and peppery finish. Lerida is the perfect oil for
dressing greens, to accompany appetizers and for dipping
with fresh bread.
