Ravida blends three local olive varieties to make their oil - Nocellara, a fruity eating olive, Carasuola, a tasty full-bodied and light green fruit, and Brancolilla for distinctive color and fragrance. Firmly committed to combining the most up-to-date organic farming methods with time-honored traditions, olives for Ravida oil are milled immediately upon harvest and the oil is bottled to order to ensure freshness. This unique oil has a bold, rustic taste, fruity aroma and golden green color.

The acidity level, or amount of free fatty acids in oil is one of the main elements that determine the quality and the benefits of a good extra virgin olive oil. Acidity determines how well the oil will maintain its properties; it is measured in a laboratory and is not detectable by the palate. In order to classify as extra virgin, olive oil must have acidity below .08%. Ravida has an acidity ranging from 0.1% to 0.2 % maximum.
