Kimberley California Wine Vinegars
One of the few American vinegar producers using authentic French-style Orleans process, Kimberley selects premium wines (made with certified organic farm grapes from California's top vineyards) to handcraft one-of-a-kind condiments. Maturing slowly and naturally for a minimum of six months in oak barrels, the vinegars taste like the fruits from which they came; rich and refined with a distinct varietal wine flavor that reflects the fertile soil and unique climate of California. The vinegars are a robust 6.5% acidity, unpasteurized (to preserve the vinegar's subtle taste characteristics), and preservative-free.

Cabernet Made with 100% California Cabernet Sauvignon, the vinegar is brilliant ruby-red, smooth and complex like a well rounded and full-bodied classic cabernet wine; use for dressing salads, for adding color and reducing sauces.
Chardonnay Made with 100% Chardonnay, the vinegar has a fruity robust authority, not unlike sturdy French Burgundy, with a hint of oak; use for light sauces and to dress delicate salad greens.
Champagne Made with Pinot Noir stock destined for blending by a California sparkling wine maker, the vinegar is exceptionally fresh, light and delicate with only five percent acidity; may be used like sweet rice vinegar for dressing food without oil.
Sherry Made with Palomino grapes, grown in California's fertile Central Valley, the vinegar has a pleasant tangy aroma of aged sherry wine with a soft, sweet, yet distinct sherry flavor that lingers on the palate; use with nut oils for dressing salads and raw vegetables, on it's own in sauces and as a finish to lentil soup.
