Balsamic Vinegars from Reggio Emilia and Modena

  • Cavalli Balsamic Condiment - produced by the Cavalli brothers, preeminent in Reggio Emilia, and the sons of legendary founder of the provincial Consortium, Ferdinando Cavalli, this balsamic is the beneficiary of Cavalli's 300 year old stocks.  Plumy sweetness, cordovan color and delicate balance render this seasoning the leader in its category.  Gold trophy winner "Outstanding Classic" 1995 Fancy Food Show.
     

  • Villa Manodori Artigianale - Modenese Chef Massimo Bottura crafts this balsamic condiment from Traditional Balsamico and aged wine vinegar and further ages it in small barrels of oak, chestnut and juniper.  This tradizionale method yields dark rich color, intense aroma and syrupy consistency.  Precious and expensive but a favorite among chefs and consumers.  Gold trophy winner 2000 Fancy Food Show.
     

  • Terres Rouges - French "balsamique" combines French and Italian expertise in unique flavors made from the renowned fruits of the Perigord-Dordogne regions.  Produced in fig, lemon/ginger and cocoa by eaux de vie distiller Elie Denoix.

Wine Vinegars from Italy, France, Spain and California

  • Italy - Badia a Coltibuono's robust aged red wine vinegar of 7% acidity.  An Italian classic produced by one of Italy's foremost winemakers.  The perfect companion to Badia a Coltibuono extra virgin olive oil.
