Avocado and Cottage Cheese with Flax and Chia Seeds, Pepper and Granverde Extra Virgin

Use a sheep’s milk ricotta if that is your preference. This makes for a wonderful savory breakfast. If you prefer something swee t to start your day, just drizzle some honey on top. Serve this with toasted slices from a rustic loaf.

Ingredients:

  • 1 avocado
  • 4 oz. cottage cheese or ricotta
  • Szechuan pepper, crushed or milled black pepper, to taste
  • Sea salt, to taste
  • 1/4 teaspoon each flax and chia seeds

Preparation:

Time: 15 minutes
Yield: 1 SERVING
  • Halve the avocado.
  • Remove the pit and skin.
  • Slice each half lengthwise into 4 pieces.
  • Drizzle with the Granverde oil and season with a bit of salt and pepper.
  • Top with cottage cheese and another drizzle of oil, and a bit more salt and pepper.
  • Scatter the seeds on top.
