
Ingredients:
- ½ teaspoon cumin, ground
- ½ teaspoon, coriander, ground
- 1/8 teaspoon allspice, ground
- 1/8 teaspoon cinnamon, ground
- 1 shallot, finely chopped
- 1 ½ cups water
- ½ cup chickpeas, canned or cooked
- ½ cup edamame, peas, fava or baby lima beans, blanched .
- Esprit du Sel Fleur de Sel
- black pepper, freshly mlled
- Microgreens, for garnish (optional)
- herbed yogurt or Tzatziki to accompany (optional)

Make the Grain Bowl
- Cook rice with packaging directions.
- Finely chop the shallot
- Blanch the beans or peas till they are bright green. Put in ice water.
- In a bowl add rice and mix in spices, shallot, chickpeas, blanched peas or fava beans.
- Add EVOO and mix well. Salt and pepper to taste. Top with Microgreens and Tzatzki.
