Ingredients:
- 1 cup cold whole milk
- ½ cup granulated sugar
- 1 tablespoon vanilla extract
- 1 teaspoon salt
- Chocolate chips (optional)
Preparation:
Time: 20 minutes + freezing time
Yield: 8 ice pops
- Mix together half of the sugar (¼ cup) with the chilled coffee.
- Mix together the other half of the sugar (¼ cup) with the cold whole milk, vanilla extract, and salt.
- In one bowl, mix together half of the coffee mixture (¾ cup) with ¼ cup of the milk mixture. Divide this coffee mixture among the popsicle molds and freeze for 1 hour. Each popsicle mold should be filled about a third of the way through.
- Meanwhile, mix together ½ cup of the remaining coffee mixture with ¼ cup of the milk mixture.
- After the first layer is frozen, divide the new coffee mixture among the popsicle molds and freeze for 1 hour.
- Mix the remaining coffee mixture and milk mixture (¼ cup coffee + ¼ cup milk) and pour over the molds once the previous layer has frozen. Top with chocolate chips, if desired, before freezing for 4-6 hours or overnight.
- After the popsicles have completely frozen, pop them out of the molds and enjoy!
