Dulce de Leche Rice Pudding

Rice pudding is a comfort food that is shared around the world. We are offering two versions; one reminiscent of North Africa or the Middle East with spices and Spanish saffron and another topped with Argentine dulce de leche.

  • Combine 4 cups of milk, sugar, cinnamon, cardamom, saffron, and salt in a large, heavy pan. Bring this mixture to a simmer and then add the rice.

  • Maintain a simmer while slowly adding the remaining 4 cups of milk. Bring to a low boil for 20-30 minutes, stirring often, until the rice is fully cooked. If the rice looks too dry, add more milk.
  • Transfer the rice to a bowl and spread a dollop of the dulce de leche onto the pudding. Sprinkle with fleur de sel and serve.
