Horiatiki-Greek Salad

Ingredients:

  • "INGREDIENTS for the DRESSING
  • 5 tablespoons
  • 1 tablespoon
  • 1 tablespoon dried Greek oregano
  • INGREDIENTS for the SALAD
  • 1 1/2 cups cherry tomatoes, halved
  • ½ cucumber sliced and cut into half-moons
  • 1 medium red onion, thinly sliced
  • I bell pepper, cored, seeded and julienned
  • 15 Greek Kalamata olives
  • 1 tablespoon capers ¾ cup Greek PDO feta cheese
  • 1 tablespoon dried Greek oregano
  • Salt and pepper to taste
  • 2 tablespoons 776 Greek Extra Virgin Olive Oil"

Preparation:

Time: 30 minutes
Yield: 4 SERVINGS
  • Gently combine the dressing ingredients with a wooden spoon in a large shallow bowl. You do not want to emulsify the dressing.
  • Add the vegetables to the bowl in the above sequence, followed by the olives, capers and cheese.
  • Sprinkle oregano over the salad.
  • Add salt and pepper to taste.
  • Drizzle with the remaining olive oil.
