- 1 tablespoon
- 1 tablespoon dried Greek oregano
- INGREDIENTS for the SALAD
- 1 1/2 cups cherry tomatoes, halved
- ½ cucumber sliced and cut into half-moons
- 1 medium red onion, thinly sliced
- I bell pepper, cored, seeded and julienned
- 15 Greek Kalamata olives
- 1 tablespoon capers ¾ cup Greek PDO feta cheese
- 1 tablespoon dried Greek oregano
- Salt and pepper to taste
- 2 tablespoons 776 Greek Extra Virgin Olive Oil"
Preparation:
Time: 30 minutes
Yield: 4 SERVINGS
- Gently combine the dressing ingredients with a wooden spoon in a large shallow bowl. You do not want to emulsify the dressing.
- Add the vegetables to the bowl in the above sequence, followed by the olives, capers and cheese.
- Sprinkle oregano over the salad.
- Add salt and pepper to taste.
- Drizzle with the remaining olive oil.
