Ingredients:
- 1 cup pitted dates
- ¾ cup rolled oats
- ¼ cup shredded coconut flakes (plus more for rolling)
- 3 tablespoons cocoa powder
- ½ cup tahini
- 1 teaspoon vanilla extract
- ¼ teaspoon cinnamon
- 1 teaspoon salt
Preparation:

Yield: 20 bites
- In a food processor, pulse together the dates, cocoa, ground coffee, tahini, vanilla extract, cinnamon, and salt until everything is combined.
- Add in the oats and coconut flakes. Pulse a few times until everything sticks together and is just combined.
- Remove the mixture from the food processor and form into 1 inch balls. Then, roll each ball in coconut flakes, if desired.
