No-Bake Coffee Bites

Ideal for busy mornings, post-workout snacks, or as a healthful dessert, these No-Bake Coffee Bites are not only delicious but also incredibly nourishing. Ingredients:

  • 1 cup pitted dates
  • ¾ cup rolled oats
  • ¼ cup shredded coconut flakes (plus more for rolling)
  • 3 tablespoons cocoa powder
  • ½ cup tahini
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • 1 teaspoon salt

Preparation:

Time: 20 minutes
Yield: 20 bites
  • In a food processor, pulse together the dates, cocoa, ground coffee, tahini, vanilla extract, cinnamon, and salt until everything is combined.
  • Add in the oats and coconut flakes. Pulse a few times until everything sticks together and is just combined.
  • Remove the mixture from the food processor and form into 1 inch balls. Then, roll each ball in coconut flakes, if desired.
