Carlos Falcó inherited family land in Toledo farmed since the 13th century. He planted 100 hectares of olive groves in the 1990s and built a state-of-the-art almazara (Spanish term for an olive oil mill) to press within hours of harvest — putting Spanish fine olive oil on the world map.
