NOTES: This olive oil has a mild fruity taste balanced by the spiciness and bitterness of the oil. It has a medium to robust pungency. There is a hint of cinnamon and warm spice.
PAIRINGS: Use for farro cooked with a mix of wild mushrooms, for roasting winter squash with spices and finished with a little honey, or in a marinade for lamb spiedini.
