The Cavalli name and reputation assure the highest quality. The 12 and 25-year age designations are minimums and do not reflect the true age of many of Cavalli’s Tradizionale which can be up to 300 years old.

MADE IN REGGIO EMILIA
In the rustic attic and in the other rooms you will simply find a long and uninterrupted series of vinegar barrels of different sizes and ages. The batteries of barrels made of different woods represent the company's only production apparatus, allowing for optimal aging and refining for the finest productions of Traditional Balsamic Vinegar of Reggio Emilia. From the small establishment, the packages with the finished products thus leave to reach markets all over the world, and delight the most shrewd restaurateurs and gourmets.
Many producers make vinegar stylistically based on Aceto Tradizionale. It is made with the same ingredient according to the consorzio rules but brought to market before the stipulated 12 years. Nor is it presented to the consortio’s tasting panel. It is labelled Condimento Balsamico (sometimes simply Condimento or Balsamico). It is of very fine quality and very accessible.
